Mini Cocoa Pancakes

Some days I just want some SWEET treats, especially when I wake up in peace with all the energy in the world (does not happen to you ???). Many of you miss chocolate on the saddest days, but I see chocolate as my friend of happy hours! (lucky me, I guess(I.e. )

Well, pancakes…How many recipes can you make with pancakes? a lot! The last I shared with you were Banana and Almond pancakes and they’re already part of the new lifestyle – gluten-free, anti-inflammatory diet – as I told you in the post about my new food (here!). This weekend, these mini cocoa pancakes, proteic and gluten-free . The problem with gluten-free pancakes is that the dough doesn´t grow too much and doesn’t have that elasticity, which means they may wither in the end … If you see these pancakes are not hyper-beautiful, BUT they are VERY tasty. That’s what matters, right?(I.e.

As soon as I got into the kitchen in the morning, I looked at the package of raw cocoa powder and thought, “Today is your day!” It was just what I wanted, a little cocoa to give me energy to workout and antioxidants in the morning. Where to buy a good cocoa, organic and completely pure? In ISWARI , as I have mentioned so many times in other recipes. The quality is excellent, in the kitchen I have baskets with those superfoods of this brand and they never disappoint. Why are they proteic pancakes? Well, because I used an almond protein that I had in the dark at home … It hasn’t any flavour, it’s natural and it always feels good to add some of this nutrient to the recipes. However, as many of you certainly don’t have these “weird things” at home, it can be substituted by isolate whey protein OR 1 tablespoon of ground almond ( aka almond flour).

Mini Cocoa Pancakes {gluten-free}

  • 2 eggs
  • 2 tablespoons ground flaxseed
  • 1 tablespoon almond protein *
  • 1 tablespoon pure cocoa powder link on top
  • 1 teaspoon of coconut sugar link on top
  • Raspberries
  • Chopped hazelnuts
  • 1 square dark chocolate melted (> 85%)
  • Coconut oil for spreading
  • *or isolate whey protein or almond flour


  1. Mix eggs with coconut sugar.
  2. Add the ground flaxseed, the almond protein and the cocoa.
  3. In a non-stick skillet, add a little coconut oil.
  4. Add 2 tablespoons of the mixture and let cook about 30sec on each side.
  5. Repeat the process for the remaining mass.
  6. Serve with raspberries, chopped hazelnuts and dark chocolate melted!
