Protein Chocolate Muffins {Gluten-Free}

This Protein Chocolate Muffins are a best choice for a snack or even for breakfast! With no grains, they are made with flax meal and coconut flour. A gluten-free and deliciously healthy recipe for a chocolate fix. 

Someone here addicted to chocolate?! Well, I’m pretty sure everyone loves it! I really can’t resist to eat a square of dark chocolate, with more than 85% cacao, every day … And since cocoa is rich in antioxidants, so it’s perfect! 🙂

And today I have a muffin recipe … with chocolate! Yes, they are healthy, gluten-free, no refined sugars, no bad-food for the gut. They are made with the best ingredients, as always. And they still have an extra protein! I used my favorite-favorite Cacao Whey Protein from Essential Nutrition, it’s such a good guys! It’s the only protein I know with functional ingredients. As I always say, using protein is optional. In this case, it can be replaced with cocoa and a little more coconut sugar – that’s what I chose to sweet the muffins. 

Protein Chocolate Muffins

Since I’m on a gluten and “processed” flours free diet, it’s been harder to find the perfect blend of flours to use in these baked goods. Choices range from flax meal, coconut flour or ground almond. This time, I chose:

  1. Ground Flaxseed
  2. Coconut Flour

The result? The muffins are really fluffy, with that touch of chocolate and ready to eat in 3 … 2 … 1! Follow up the recipe now!

Protein Chocolate Muffins {Gluten-Free}

  • 2 eggs
  • 2 Tbsp Natural Greek yogurt
  • 3 Tbsp unsweetened almond or coconut milk
  • 1 Tbsp organic coconut oil
  • 2 Tbsp flax meal
  • 1.5 Tbsp coconut flour
  • 1 tablespoon pure cocoa powder
  • 1 Tbsp whey protein cacao flavor - from Essential Nutrition *
  • 1.5 Tbsp Coconut sugar
  • 1 tsp baking powder gluten free
  • Raw Cocoa Nibs
  • Melted Dark Chocolate to serve
  • * can be substituted for cocoa powder plus 1/2 teaspoon of coconut sugar


  1. Preheat the oven to 180ºC and grease a 4 muffin pan with coconut oil.
  2. In a bowl, beat eggs with yogurt and almond drink. Add coconut oil.
  3. In another bowl, mix dry ingredients: flax meal, coconut flour, cocoa whey protein, cocoa, baking powder and coconut sugar.
  4. Gently stir the dry ingredients into the wet mixture.
  5. Add cocoa nibs and stir.
  6. Allow the batter to rest for about 10 minutes.
  7. Put the dough in the forms, not fully filled. Bake about 25 to 30 minutes.
  8. Serve with melted dark chocolate!
