Preheat the oven to 180º. Grease a small form (15cm x 15cm) with a little of coconut oil.
In a bowl, mix the coconut oil with the honey until smooth.
Add the coconut and almond flours and stir until well mixed. Add cinnamon (optional). The dough will be a bit wet.
Put the dough in the form, spreading with a spoon and, if necessary, use the fingers to homogenize.
Bake for about 7 to 8 minutes, until golden brown. Withdraw and set aside a few minutes.
In another bowl, beat the quark cheese with the coconut sugar (optional). Place it in the cups.
Top with pieces of the crust, breaked in pieces, on top and garnish with raw cocoa nibs.
