Protein Chocolate Muffins {Gluten-Free}

  • 2 eggs
  • 2 Tbsp Natural Greek yogurt
  • 3 Tbsp unsweetened almond or coconut milk
  • 1 Tbsp organic coconut oil
  • 2 Tbsp flax meal
  • 1.5 Tbsp coconut flour
  • 1 tablespoon pure cocoa powder
  • 1 Tbsp whey protein cacao flavor - from Essential Nutrition *
  • 1.5 Tbsp Coconut sugar
  • 1 tsp baking powder gluten free
  • Raw Cocoa Nibs
  • Melted Dark Chocolate to serve
  • * can be substituted for cocoa powder plus 1/2 teaspoon of coconut sugar


  • Preheat the oven to 180ºC and grease a 4 muffin pan with coconut oil.
  • In a bowl, beat eggs with yogurt and almond drink. Add coconut oil.
  • In another bowl, mix dry ingredients: flax meal, coconut flour, cocoa whey protein, cocoa, baking powder and coconut sugar.
  • Gently stir the dry ingredients into the wet mixture.
  • Add cocoa nibs and stir.
  • Allow the batter to rest for about 10 minutes.
  • Put the dough in the forms, not fully filled. Bake about 25 to 30 minutes.
  • Serve with melted dark chocolate!
